How to Make Cheesecake Puff Pastry

  1. Puff pastry: Place a thawed puff pastry sheet onto a baking sheet. Use a sharp knife to score a rectangle around the edges, leaving ½ inch from the edge. Poke holes with a fork all over the dough. Bake at 400°F for 10-12 minutes. Repeat with the second sheet.
  2. Make the cream: Beat together cream cheese, mascarpone, and sugar.
  3. In a separate bowl, beat heavy whipping cream until you get stiff peaks.
  4. Gently fold heavy cream into the cheese and sugar mixture.
  5. Once the pastry sheets are cooled, press the center lightly, making room for the cream. Then layer on the cheesecake cream and spread evenly onto both puff pastries.
  6. Finish with your favorite berries, and enjoy!

Expert Tips for Baking Like a Pro

  • Keep oven closed: Don’t open the oven door while baking. It will prevent the dough from getting a good rise.
  • Make ahead: If you want to make this tart ahead of time, simply bake the dough and make the cream, but don’t assemble until you are ready to serve.

Recipe FAQs

What kind of berries can I use?

You can use any berries you have on hand. I used strawberries, blueberries, blackberries, and raspberries. I’ve tried the tart with just raspberries, and it was great. Strawberries alone are great as well. Use whatever your favorite combination is, and enjoy the tart.

Can this tart be made in advance?

Yes! You can bake the pastry tart a day in advance and keep it covered. The cream may also be prepared a day in advance and refrigerated. Then, add the cream to the tart and top with berries before serving.
