Breakfast Sandwich

A wonderful Breakfast Sandwich is always a good idea for a hearty breakfast. I love this one with eggs, ham, cucumbers, tomatoes, and pickles with a top of a spicy mayo spread. Slightly unexpected for a breakfast sandwich but OH SO GOOD!

How to Make a Breakfast Sandwich-

  1. Slice cucumber, pickles and tomato. Combine mayo, barbeque and Sriracha for the spread.
  2. Cook eggs to desired finish (I like mine over easy and cook them on low heat covered so I don’t have to flip them.) Season egg to taste.
  3. Heat the meat.
  4. Lightly toast the bread slices.
  5. Add half of the spicy mayo mixture to one slice of bread. Add one egg, one slice of cheese and half the ham. Add half the tomatoes, pickles and cucumbers {not necessarily in this order} and top with the second piece of bread.

I like mine sandwich open-faced this way my veggies are on top and I skip the second slice of bread. Don’t forget the jalapenos if you have a weakness for them.

  • 4 slices bread slices
  • 6 ham slices
  • 2 large eggs
  • 2 cheese cheese
  • 1 small cucumber
  • 1 small pickle
  • 1 small tomato
  • 2 Tbsp mayo
  • 1 ½ tsp barbeque
  • ¼ tsp srirachi or hot sauce
  1. Slice cucumber, pickles, and tomato.

    PICKLES ON A BREAKFAST SANDWICH?! My mind is blown. But, seriously, that sounds so wonderfully unique. I love pickles and actually tried some pickling of cucumbers this fall. We gave them as gifts for Christmas and were a huge hit. This weekend pickles will be added to my fried eggs. Thank you for this one 😉

      Eric, Haha. Maybe it’s a thing I picked up when I was pregnant and stuck to it. It’s definitely optional but oh so delicious if u like yourself a pickle!!:).

    I have some moskovska that needs to be finished before it goes bad. Such a good idea. Will be trying making this and loading it with the jelapenos!:)

      Sonechka.. You will enjoy this.. You know what I do when I haven’t used up my kolbasa in time? I slice it and freeze it, say three slices and a piece of small parchment paper, another three slices and parchment paper. If I ever crave a sandwich or don’t have lunch meat I get my baggies gently with a butter knife to loosen my slices of kolbaska and whaalla, got myself some meat for a sandwich (return the rest to the freezer for future cravings. Then just gently fry it and create this lovely sandwich and I am oh so happy no meat was thrown away=)..

    Looks delicious !!:)) I should defffinateky try this maybe this upcoming weekend :)) ow I love to read the Bible in the quite times for me it’s usually when kids are off to bed or napping :)) it’s so nice ;))

      Svetlana, Oh do try it. It’s such a simple and delish treat!!:0) Agree on the Bible, those quiet moments really give us mama’s/wive’s that umff to keep going. I cannot imagine what my life would look like if I didn’t have that daily Bible reading and time with my God. If I go a few days without reading I’m already seeing a difference in myself and it’s not a attractive difference, hehe!=)..
