Breakfast Sandwich

Breakfast sandwiches are always a good idea, especially this one that has eggs, warm ham, cucumbers, tomatoes, and pickles with a top of a sriracha mayo spread. Oh so good!!!

Breakfast is the most amazing meal to enjoy (for me it is at least). Our boys usually leave for school 7:30 a.m. My little ones can sleep another hour. The house is so nice and quiet and this is my favorite time of day to read my Bible. Once my Bible reading is done and the aroma of fresh coffee is filling the kitchen, these sandwiches are my favorite to prepare. I like to eat mine like an open faced sandwich with just one slice of thick bread underneath and cut slices with a knife and eat it with a fork. My hubs on the other needs two slices of bread like a sandwich to enjoy this sandwich. The amazing flavors of egg over easy with warm slices of ham, fresh cuces, tomatoes with pickles are like wowzers!!.. Mmmm. {I LOVE to use doktorska kolbasa or moskovska when I have those on hand and they get heated as well}. You can just use mayo as the condiment or barbeque or whatever else you enjoy for breakfast. I like the combination below it gives it a little kick but that is totally optional. If you like food poppin add some jalapenos!!.

Ingredients:

4 slices of bread

6 thin slices of ham

2 eggs

2 slices cheese

1 cucumber

1 pickle

1 small tomato

2 Tbsp mayo

1 ½ tsp barbeque

¼ tsp sriracha or hot sauce

Makes: 2 sandwiches

Directions:

Slice cucumber, pickles and tomatoes. Combine mayo, barbeque and srirachi.

Cook eggs to desired finish (I like mine over easy and cook them on low heat covered so I don’t have to flip them.) Salt and pepper to taste.

Heat the meat. (I just grease my pan with baking spray).

Lightly toast the bread.

Add half of the spicy mayo mixture to one slice of bread. Add one egg, one slice of cheese and half the ham. Add half the tomatoes, pickles and cucumbers {not necessarily in this order} and top with the second piece of bread. I like mine open faced this way my veggies are on top. Don’t forget the jalapenos if you have a weakness for them. [Repeat with the second sandwich].

    PICKLES ON A BREAKFAST SANDWICH?! My mind is blown. But, seriously, that sounds so wonderfully unique. I love pickles and actually tried some pickling of cucumbers this fall. We gave them as gifts for Christmas and were a huge hit. This weekend pickles will be added to my fried eggs. Thank you for this one 😉

      Eric, Haha. Maybe it’s a thing I picked up when I was pregnant and stuck to it. It’s definitely optional but oh so delicious if u like yourself a pickle!!:).

    I have some moskovska that needs to be finished before it goes bad. Such a good idea. Will be trying making this and loading it with the jelapenos!:)

      Sonechka.. You will enjoy this.. You know what I do when I haven’t used up my kolbasa in time? I slice it and freeze it, say three slices and a piece of small parchment paper, another three slices and parchment paper. If I ever crave a sandwich or don’t have lunch meat I get my baggies gently with a butter knife to loosen my slices of kolbaska and whaalla, got myself some meat for a sandwich (return the rest to the freezer for future cravings. Then just gently fry it and create this lovely sandwich and I am oh so happy no meat was thrown away=)..

      Svetlana, Oh do try it. It’s such a simple and delish treat!!:0) Agree on the Bible, those quiet moments really give us mama’s/wive’s that umff to keep going. I cannot imagine what my life would look like if I didn’t have that daily Bible reading and time with my God. If I go a few days without reading I’m already seeing a difference in myself and it’s not a attractive difference, hehe!=)..
