So let’s talk about asparagus, shall we?. Those of you that have never tried asparagus, can you pretty please give this recipe a try? Like pretty please with cherry on top? I promise, this will be the recipe that will make an asparagus lover out of you (if you are not already so, which you should be of course). My younger sister has never tried asparagus. She was willing to give the recipe a try. I had her over last week and I made this side dish just for her. She was really nervous and had no idea what to expect. As she took the first few bites, she was pleasantly surprised. It was a good kind of surprise. She liked it! Score! What is there not to like though? The asparagus becomes soft once baked, topped with Mozzarella and Parmesan cheese, a bit crunchiness from the bread crumbs, oh so amazing.
Growing up in Ukraine and immigrating to the United States, we never ate foods like asparagus, broccoli or even Brussels sprouts. We ate the more traditional Ukrainian and Russian food like soup or braised potatoes and of course some classic Ukrainian salads. I started trying foods like that after we were married and my taste buds became a little more excited for new foods (if there is such a thing). Ha! It seems after every pregnancy, I started liking new food I didn’t like beforehand. Though I cannot say that each of the different foods was a love relationship right away. Some took a while to adjust to and others took forever to repeat
One of my favorite ways to enjoy asparagus is with the combination of baked salmon. There is just something about salmon and asparagus that just makes the heart sing. However, this cheesy asparagus makes a great side for parties. It’s so easy to make yet makes a beautiful statement on the table.
Ingredients for Cheesy Asparagus Gratin-
1 pound asparagus
1 cup Mozzarella cheese
1 Tbsp olive oil
1 Tbsp Parmesan cheese
2 tsp bread crumbs
2 Tbsp butter, cubed
How to make Cheesy Asparagus Gratin-
Preheat oven to 375°F.
Trim ends of asparagus and lay out onto a rimmed baking sheet. Drizzle asparagus with olive oil. Lightly salt and pepper asparagus and toss.

- 1 cup Mozzarella cheese, shredded
- 1 Tbsp olive oil
- 1 Tbsp Parmesan cheese, grated
- 2 tsp bread crumbs
- 2 Tbsp butter, cubed
- Salt and pepper
Preheat oven to 375°F.
Trim ends of asparagus and lay out onto a rimmed baking sheet. Drizzle asparagus with olive oil. Lightly salt and pepper asparagus and toss. Add Mozzarella cheese atop asparagus. Add butter, sprinkle Parmesan cheese and bread crumbs.
Bake 10-12 minutes until asparagus is tender.
