Easy Ground Beef Kabobs:

We really like to use ground meat often. Whether it be in a meatball & rice soup, an easy potato casserole, or Ukrainian meatballs, there’s just something about ground meat that makes it easy to work with and still get the phenomenal taste.

These Uzbek kabobs are no different; it’s so easy to make these ground kebabs. No need to cut up meat and trim excess fat. All you have to do is season the meat, set aside to marinade, add to skewers and grill.

Mediterranean Kabobs:

When grilling beef, you want to give it a good marinade and time for the marinade to penetrate into the meat, a lengthy process! Since the meat is already ground in this recipe, it makes it easy and fantastic to grill. This recipe is a breeze.

Okay, so I will be honest with you. When I first tried this when my mother-in-law made them, I was not a fan. Coriander wasn’t a seasoning I was used to, and it was a nogo for me. Now that I am used to Mediterranean spices, I love these, and we have them often.

Can I use substitute the beef?

Though we use beef most often, ground lamb is just as delicious to use instead.

What kind of ground beef do I use?

Since these kebabs will be grilled. You need the beef to have some fat in it. I typically use either ground chuck, which is an 80/20 ratio, or ground round, which is an 85/15 ratio of lean/fat.

  • Grate the onion on the side that has outward protruding edges. It gives the onion a fine grate. 
  • Combine all the ingredients in a bowl and mix until well incorporated.
  • Cover and let marinate at least one hours (or overnight).
  • Form kebabs out of the beef, all similar in size. (To form, first shape a patty, then, out it around the skewer and tightly close and secure.)
  • Grill for about 7-9 minutes on medium/high heat, flipping as needed. 
  • Serve immediately.
