A slow cooker roast beef is especially great for busy evening. With just 10 minutes of prep time, you have yourself a delicious dinner! The meat is cooked low and becomes melt in your mouth tender and combined with the added vegetables, this is comfort food at its finest.

You can prep everything the night before if you’ll be busy, just keep refrigerated and cook the day of.

VEGETABLES- For this recipe we used carrots and celery cut into strips and quartered the onion. You can also use green beans.

BEEF– For the meat, we used a chuck roast. A shoulder steak, pot roast, chuck or round steak, top blade or just about any roast can be used for a tender crockpot roast beef.  You’ll want to cut the meat into about 1 ½” – 2” pieces.

SEASONING- What makes this recipe so easy is that you don’t need any kind of seasoning for it. Just use your favorite Italian salad dressing and you are set. So easy.

ROAST- Add all of the ingredients into a crockpot and cook. To cook roast on low, you’ll need about 6-7 hours, and on high about 4-5 hours. You can serve the roast beef with mashed potatoes and quick homemade dinner rolls. Since there’s already carrots cooked with the roast, you don’t even need a side dish.

Ingredients

  • 3 - 3 1/2 pounds beef
  • 1 medium onion
  • 2 carrots
  • 2 celery ribs
  • 5 garlic cloves, halved
  • 1 1/2 cups Italian dressing

Instructions

  • Cut meat into 1 ½” – 2” pieces. Cut carrots and celery into strips.

    I just put this recipe into the slow cooker. I can’t wait to try it in the morning. But, I was reading earlier comments and decided to add my 5 cents. I make braised potatoes to pressure cooker. What I do is; 1st cook the beef for 20 min then wait for it to open, 2nd; add potatoes, water, and everything else usually added to this recipe and set the pressure cooker for 3-4 minutes. Now, by the time the lid locks and unlocks it’s much longer than 3-4 minutes and the potatoes come out tasting perfect!

      Hi Luda,
      Look up at the Notes. There is a list of meats you can use :). I am sure you can bake it, however, I’ve never tried it, therefore, have no idea how much the baking the would be. Hope you give this version a try. It’s super yummy.

      You can use any Italian dressing, really: Kraft, WishBone, Olive garden. I have used all of those and turns out wonderful. I hope you enjoy the recipe..:)

    Yes, I was one of them that requested more slow cooker recipes, and thank you for taking into consideration. Slow cooker is a most have when you have a big family. I cook similar meal with few skin on golden or red potatoes and mix them right in with the rest of the veggies, no need to wait for another side dish.

        I have a instant pot pressure cooker and I love it so much, it’s the best thing to have when u have a big family or small children that u can’t always be in the kitchen for hours. Mine is the 6 quart and I got it from amazon when they had Black Friday deals. So worth it you should definitely get one, will make ur cooking a lot faster and easier. I make ur beef borsch in there which takes 20 mins for the beef to cook then I add the rest of ingredients except for the herbs and cooks for 8mins. And it’s done. And I love the setting that u can keep the meal warm especially soups that’s my favorite option. I would like to try this recipe as a slow cooker recipe cuz it also has the slow option:)

        That’s awesome, I think you will love the instant pot just at first it might take some time to get used to it and to figure out how long to cook food in there but I go by the book and what I need to cook I use those settings and then I just use my recipes:)
        I’m going to try out some slow cook recipes and see how they turnout:) but the most I use it for is for meats like beef, chicken wings, ribs.., always cook my rice, buckwheat, and plov in there. On of my favorite meal to cook in there is beef braised potatoes which turnout so yummy. And of course soups. Also steaming vegetables love that option because my hubby loves veggies.

        Hope you will love the pressure cooker and I’m looking forward when you will put new recipes for the pressure cooker?☺️

        I actually made this recipe today and Absolutely love it??????
        I was always scared to try slow cooker recipes but this was my first time and I couldn’t believe that it would taste good with Italian dressing??

    Looks really good?
    When using Italian dressing, what kind did you use.
    I have the Olive Garden one , will that work?
    Also when putting 1 1/2 cups of the dressing, is it just right with the seasoning ?
    It’s not too salty?
