Chicken Avocado Bacon Panini Recipe

Homemade panini recipe. Panini chicken sandwich with chicken and bacon, slices of avocado and tomatoes with cheese in a chipotle spread.

Ingredients

  • 2 slices bread, thick slices
  • ½ chicken breast or 3 tenders
  • 2 bacon slices, cooked
  • 1/2 tomato, sliced
  • ¼ avocado, sliced
  • 6 sliced or Provolone cheese*
  • cilantro or parsley, optional

Instructions

  • Combine ingredients for the chipotle sauce.
  • Lightly beat chicken with meat mallet, season with salt and pepper. Sautee in a skillet with bacon slices, (add a dash of oil if not enough fat in bacon slices).
  • Spread some of the sauce over bread (we like sauce on both bread slices).
  • Add the chicken, bacon, tomato slices, avocado, cheese, and herbs. Close sandwich.
  • Cook in Panini press.
  • Enjoy!!

Notes

If you don't have a panini press, cook sandwiches with butter in skillet.
