Light Salad
Spinach, avocado, tomato, cucumber and shrimp with a homemade dressing.
- Ingredients:
- 1 cup spinach, packed
- 1/2 avocado, sliced
- 1/2 cup halved cherry tomatoes
- 1 small cucumber,sliced
- 6 fully cooked shrimps
- Dressing:
- 1 tsp mayo
- 1 garlic clove, minced
- 1 Tbsp fresh squeezed lemon juice
- 3 Tbsp Olive Oil
- 1/4 tsp salt
- Freshly grated black pepper
Add the spinach to a plate.
Slice the avocado into thin slices, add to spinach.
Add the shrimp.
Slice your cherry tomatoes in half and add to rest of ingredients..
Slice the cucumber into thin slices and add to rest of the ingredients.
Prepare the dressing; add all of the ingredients for the dressing in a small bowl and mix well. Pour over the salad. Add some freshly grated pepper. Serve.
