Light Salad

Spinach, avocado, tomato, cucumber and shrimp with a homemade dressing.

Ingredients

  • Ingredients:
  • 1 cup spinach, packed
  • 1/2 avocado, sliced
  • 1/2 cup halved cherry tomatoes
  • 1 small cucumber,sliced
  • 6 fully cooked shrimps
  • Dressing:
  • 1 tsp mayo
  • 1 garlic clove, minced
  • 1 Tbsp fresh squeezed lemon juice
  • 3 Tbsp Olive Oil
  • 1/4 tsp salt
  • Freshly grated black pepper

Instructions

  • Add the spinach to a plate.
  • Slice the avocado into thin slices, add to spinach.
  • Add the shrimp.
  • Slice your cherry tomatoes in half and add to rest of ingredients..
  • Slice the cucumber into thin slices and add to rest of the ingredients.
  • Prepare the dressing; add all of the ingredients for the dressing in a small bowl and mix well. Pour over the salad. Add some freshly grated pepper. Serve.
