Crunchy Red Cabbage Salad

An amazing crunchy salad recipe with cabbage and red cabbage, carrots, almond and sunflower seeds with a delicious homemade salad dressing.

Ingredients

  • 4 cups green cabbage, finely shredded
  • 2 cups red cabbage, finely shredded
  • 1 carrot, julienned
  • 6 radishes, julienned
  • 1/4 cup sliced almonds
  • 1/3 cup sunflower seeds
  • 1/4 cup craisins (optional)
  • 2 Tbsp green onion, finely chopped (optional)

Dressing-

  • 3/4 cup mayo
  • tsp vinegar
  • tsp granulated sugar
  • salt and pepper, to taste

Instructions

  • Finely shred both green and red cabbage with a mandoline slicer. Julienne carrot and radishes. Add all of the ingredients to a large bowl.
  • In a small bowl, combine ingredients for dressing. Pour about 2/3 of dressing. Add more dressing if needed. You don’t want it too wet.
