Chewy and Soft Chocolate Chip Cookies

An easy recipe for the BEST Chocolate Chip Cookies made from scratch. The homemade cookie dough batter yields soft and chewy cookies loaded with chocolate chip morsels.

Ingredients

  • 16 Tbsp unsalted butter, room temp (2 sticks)
  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed light
  • ½ tsp salt
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2 3/4 cups all-purpose flour, measured then sifted
  • 1 tsp baking soda
  • 2 cups chocolate chip morsels

Instructions

  • Preheat oven to 350° F. Line baking sheet with parchment paper.
  • In a large bowl, cream the butter, sugar, brown sugar, and vanilla.  Add one egg and mix, lightly beating after each egg.
  • In a small bowl, combine the flour, baking soda, and salt.
  • Add the flour to the butter mixture. On low speed, beat until well incorporated.
  • Fold in chocolate chip morsels.
  • Once the dough is combined, chill in the fridge for 30 minutes.
  • Shape 24 medium cookies (or 16 large balls).
  • Place cookies onto baking sheet. Bake for 8-9 minutes (11 minutes for the large cookies).
  • Enjoy!

Notes

  • The cookies expand while baking, so it's important to leave space between the cookie dough balls when arranging them on the pan.
  • When baking the cookies, take them out of the oven after 8 or 9 minutes, even if they look under done. The cookies will finish baking in the residual heat and won’t overbake.
  • Resist the urge to dig into the cookies right away! Let them cool for a couple of minutes out of the oven before serving.
