Ingredients

lb
potatoes, 1/2" cubes

oz
bacon, cut into four
1/2
green or red pepper, 1/2" cubes
1/3
medium red onion, 1/2" cubes

canola oil (or Olive oil)

large eggs
butter, optional
seasoning-
¾
tsp
salt, or to taste

ground paprika

ground black pepper

Instructions
Preheat oven to 425°F. Line a rimmed
baking sheet
with
parchment paper
.
Peel and cube potatoes into small even cubes, about 1/2" in size.
Rinse potatoes in cold water and pat down dry.
Cube pepper and onions.
Add potatoes, onion and peppers to the baking sheet.
In a
bowl
combine the ingredients for the seasoning.
Drizzle oil over everything and season. Gently toss to coat.
Cut bacon strips into four, add through the other ingredients.
Cook for 15 minutes, or until the bacon is crispy and potatoes are almost done. Gently toss.
Create four wells in potatoes.
Break an egg into each well.
Cook an additional 6-10 minutes, or until the eggs are cooked to desired doneness.
Serve with avocado.
