Ingredients

  • 1 portion shredded chicken
  • ½ portion homemade biscuits
  • 4 Tbsp unsalted butter
  • ½ large onion finely chopped
  • 3 garlic cloves minced
  • 3 Tbsp unsalted butter
  • 1 1/2 cups chicken broth
  • cup heavy whipping cream
  • 1 ½ tsp salt
  • ¼ tsp ground black pepper
  • 2 cups frozen vegetables

Instructions

  • Make a half a portion of the homemade biscuits dough and set aside (don't bake).
  • Make 1 portion of shredded chicken (or use leftover chicken). Shred the chicken and set it aside.
  • In a deep skillet, over medium-heat, sauté the onions with the butter until tender and golden.
  • Add garlic and cook until fragrant.
  • Add flour and stir until combined.
  • Once the sauce is thick, add the shredded chicken and the veggies to the pan and mix to combine.
  • Spread the chicken mixture into a 9x13-inch baking dish. Top with scoops of the biscuit dough, using up all the dough and brush with melted butter.
  • Bake until the biscuits are golden brown and the sauce is bubbly and warm.
  • Garnish with fresh herbs like cilantro, thyme or parsley to serve.
