Layered Salad

A great and easy layered salad with lettuce (or romaine), sliced tomatoes, red peppers, cooked eggs with a layer or mayo and Parmesan and bacon. The perfect recipe for potlucks.

Ingredients

  • 1 romaine lettuce, chopped
  • 1 red pepper, sliced
  • 6 radishes, sliced
  • 3/4 cup peas
  • 1/4 cup green onion, chopped
  • 1 1/4 cup mayonnaise
  • 1/3 cup parmesan cheese
  • 8 oz bacon, chopped and sauteed
  • 3 tomatoes, sliced
  • 4 eggs, cooked and sliced
  • ground black pepper

Instructions

  • Boil the eggs, allow to completely cool.
  • Saute the bacon, transfer to paper towel and allow to completely cool.
  • Tear the romaine (or lettuce) and into a bowl as the first layer.
  • Thinly slice peppers and place on top of the lettuce.
  • Thinly slice radishes and add over the peppers.
  • Add the peas (don't use canned).
  • Chop the green onion and add over top of peas.
  • Carefully, spread the mayo, then the Parmesan cheese and some freshly grated pepper. (Reserve about a tablespoon of cheese to sprinkle on top of the eggs.)
  • Add the cooled bacon.
  • Slice the tomatoes and place atop the bacon.
  • Sliced the cooled eggs, add overtop of tomatoes.
  • Sprinkle the remaining cheese. Add some freshly grated pepper.
