  • 2 lbs salmon

salmon seasoning-

  • 1 tsp thyme
  • 1 tsp rosemary
  • ¼ tsp ground black pepper
  • 1 tsp salt
  • 1 tsp parsley flakes
  • 2 garlic cloves, minced
  • 2 Tbsp extra virgin olive oil

crab stuffing-

  • 8 oz crab meat
  • 1 celery stick
  • 1 ½ Tbsp breadcrumbs
  • 1 ½ Tbsp parmesan cheese
  • 1/4 cup mayo
  • 1/4 cup shredded cheese**
  • tsp ground black pepper
  • ¼ tsp salt
  • 1 tsp parsley flakes
  • 3 Tbsp unsalted butter

  • In a bowl, combine all the ingredients for the salmon seasoning.
  • Turn salmon upside down. Brush the bottom with the salmon seasoning.
  • Flip the salmon upside down and with a pastry brush, brush the seasoning on the salmon.
  • Turn the salmon right side up and cut the salmon into four fillets. Make an opening in the middle of each salmon (don’t cut in half, crab stuffing will just fall apart).
  • Season the rest of the salmon with the remaining seasoning.
  • Cut the crab into small pieces. Finely chop the celery.
  • Combine all the ingredients for the crab stuffing a bowl.
  • Open the salmon and stuff with the stuffing, repeat to all four fillets. Add the fillets into a baking sheet and cover with foil.
  • Bake at 365°F for 15 minutes and an additional 15-20 minutes uncovered. Do not overbake the salmon.
  • Top the stuffed salmon with melted butter and serve.
  • Enjoy!

** You can use any of your favorite types of shredded cheese.
