In a bowl, combine all the ingredients for the salmon seasoning.
Cut the salmon into 3 fillets. Make a cut in the middle of each fillet, not cutting all the way through. Rub all sides of the fillets with the seasoning using a pastry brush.
In a large bowl, add the chopped crab, chopped celery, breadcrumbs, parmesan cheese, mayo, shredded cheese, pepper, Italian seasoning and melted butter and mix until well combined.
Open the salmon and stuff with the crab stuffing, repeat with all of the fillets. Cover with foil.
Bake at 365°F for 10 minutes and an additional 10-15 minutes uncovered, until cheese melts. Do not overbake the salmon.
