Mexican Salad Recipe

A simple salad with chicken, corn, peppers, onions, tomatoes, and parsley mixed into a homemade horseradish dressing.

Ingredients

  • 1 chicken breast, cut in half
  • tsp olive oil
  • salt & pepper, to taste
  • 3 small sweet peppers, sliced thin
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup corn. fresh or canned
  • ½ small red onion, chopped
  • 1/4 cup parsley, or cilantro

Dressing-

  • 2 Tbsp honey
  • 2 garlic cloves, minced
  • 3 Tbsp oil
  • 2 tsp vinegar
  • 2 tsp creamy horseradish sauce

Instructions

  • Heat oil on med/high heat. Once hot, add chicken breast. Season with salt and pepper to taste. Cook 2-3 per side. Set aside to completely cool.
  • Meanwhile; slice peppers and red onion into thin short strands. Cut cherry tomatoes in half. Finely chop parsley.
  • Combine all of the ingredients for the dressing. Mix vigorously with a fork.
  • Pour dressing over the ingredients.
  • Refrigerate (covered) if not enjoyed immediately.

Notes

*A note on the dressing. You can adjust the measurements of each ingredient to your liking. I don’t like a real sharp taste of the horseradish so I don’t add too much. My mother in last prefers more so she adds more than I do and she adds more vinegar. Give it a try when you are done mixing and see what you think.
