Breakfast Avocado Egg Sandwich

Ingredients

  • 2 english muffins
  • 4 slices original baby Swiss cheese
  • 4 tomato slices
  • 1/2 avocado, sliced
  • 2 Tbsp fresh basil, chopped
  • 2 eggs
  • 2 Tbsp balsamic glaze

Instructions

  • Slice the English muffins in half. Place 2 slices of Swiss cheese onto each muffin.
  • Toast in the oven at 400°F until the cheese melts and muffins are desired crunchiness (5-8 min.)
  • Slice the tomato into thin slices. Slice 1/2 an avocado into thin slices, using 1/4 on each sandwich. Chop the basil.
  • Cook 2 eggs with 1 tsp oil.
  • Place the tomato, avocado, egg, and basil on top of the English muffins. Drizzle the balsamic glaze on top.
