Grilled Chicken Kebab Recipe

The most juiciest grilled chicken kebab recipe with vegetables. Chunks of chicken marinated in a flavorful marinade then added to skewers with vegetables and cooked until tender.

Ingredients

  • 1 1/2 lbs chicken breast, boneless & skinless
  • 1/2 red bell pepper
  • 1/2 orange bell pepper
  • 1/2 green bell pepper
  • 1/2 yellow bell pepper
  • 1/2 red onion
  • 6 oz white mushrooms

Instructions

  • Stark by cutting the chicken into about 1" - 1 1/2" pieces. Cube the peppers and onions uniform pieces about the size of the chicken.
  • In a bowl, combine all the dry seasonings. Mix together the paprika, salt and pepper.
  • In a different bowl, mix the ingredients for the marinate: combine mayo, oil, hot sauce, minced garlic and honey.
  • Combine the cut vegetables, the whole mushrooms and chicken. Season and toss in the wet marinade, sprinkle the dry seasonings and toss to combine. Marinate for 30 minutes to 4 hours (or overnight).
  • Thread the chicken and vegetables onto grilling skewers.
  • Grill 12-15 minutes over medium heat, turning the skewers as needed so all sides are cooked (cooking time will vary depending on your grill and size of ingredients).
  • Serve and enjoy, friends.

Notes

Cut evenly: For even cooking, be sure to cut all ingredients evenly to prevent raw chicken and burnt vegetables.
Bake or pan sear: If you don’t have a grill, preheat your oven to 425 ℉ and bake for 15-20 minutes, or until chicken reaches an internal temp of 165℉. Or, cook on a cast iron grill pan over medium heat until the chicken is cooked through.
Make ahead: Prepare the chicken marinade up to 24 hours in advance and marinade the chicken in the fridge. Or, prepare the marinade, add to a freezer-safe bag with the cut chicken pieces, and freeze for up to 3 months. Thaw before cooking per instructions.
