Vegetable Lo Mein Recipe
Homemade Vegetable Lo Mein Recipe is prepared in just 20 minutes! Silky egg noodles with mushrooms, broccoli, pepper and carrots in a flavor-packed sauce. This Chinese dish is so much better than takeout.

Ingredients

lo mein noodles

mushrooms, quartered or halved

medium broccoli florets

large carrot, cut into thin strands
1/2
red pepper, sliced

garlic cloves, minced

ginger, grated

green onion, chopped

oil, for sautéing

unsalted butter, for sautéing
lo mein sauce-

sesame oil

Instructions
Cook lo mein noodles according to package instructions. Drain, cover and set aside to keep warm.
Quarter mushrooms. Cut broccoli into medium florets. Cut the carrot into thin strands. Slice pepper into thin strands.
In a large
skillet
, over med/high heat, saute mushrooms, broccoli, carrots, and peppers with oil and butter until fully cooked.
In a
bowl
combine all the ingredients for the lo mein sauce.
Once the vegetables are cooked add the minced garlic and ginger and cook until fragrant.
Add the lo mein noodles into the vegetables and pour in the sauce.
Mix and cook until noodles are reheated. Stir in green onion.
Enjoy.
