Zucchini & Eggs Breakfast Fritters.

Breakfast is by far my favorite meal of the day and is my favorite meal to prepare. Kiddos are more into cream of wheat, oatmeal, or milk soup with angel hair pasta but my hubby and prefer a great sandwich with eggs, omelet or these delicious breakfast fritters I am sharing today. I cannot begin to explain how amazing this recipe is. The zucchini cooks through just enough to be tender but adds so much flavor and added to eggs along with cheese and ham. I am telling you what, winner.. winner. It’s superb. Our kiddos, who are NOT lovers of zucchini, devoured these. Not only is the recipe superb, it is so filling and easy to make.

If you are growing a garden this year, I am sure most if you are on the “my garden is overflowing with zucchini stage”, we sure are. Zucchini for days! When zucchini is in full swing, we enjoy so many different zucchini recipes. We love canning zucchini for later use (and by canning I mean I usually do like 100 jars a year).  We enjoy zucchini in dessert bars and a fav of mine – zucchini bread with chocolate chips, soo good!

Enjoy this recipe with a dollop of sour cream. I love myself some sriracha or hot sauce, just takes all foods to a whole new level of awesomeness. So, I enjoy my breakfast fritters with sour cream and a lovely touch of hot sauce. Come to MAMA, bombzilla.

Zucchini & Eggs Breakfast Fritters.

You can use whatever cheese you have on hand. Four cheese, Mexican or Colby work best. Mozzarella is fine if that is all you have as well. Just a tip. Buy blocks of cheese and grate the cheese yourself. It tastes so much better, is less expensive and has fewer additives to keep the cheese fresh. :O) You’re welcome.

Tip: I scoop my mixture using a 1/4 measuring cup. Easier to measure and ensure all fritters are about the same size. 🙂 Also, I made these a little bigger so it would be easier to take pictures

Zucchini & Eggs Breakfast Fritters. .

Ingredients:

3 cups grated zucchini

4 large eggs

1 large garlic clove, minced

¼ cup flour

1 ¼ tsp salt, or to taste

½ cup chopped ham

1 cup shredded cheese

Pepper to taste

Oil, to sauté

Makes: 8 – 10 breakfast fritters

Directions:

Grate zucchini on course size of a grater and squeeze grated zucchini to remove excess moisture. Lightly whisk eggs. In a bowl, combine zucchini, eggs, garlic, flour and pepper; mix well.

Combine all of the ingredients.

In a non-stick skillet, over medium heat, heat oil (just enough oil to lightly cover bottom of skillet). With a ¼ measuring cup, scoop mixture and add to heated pan. Repeat until skillet is full. (I used 2 skillets at the same time so all cooked together). With a spoon, gently distribute mixture evenly. Add some ham and cheese to each fritter. Then add some more mixture to close patty so the ham and cheese are covered with egg/zucchini mixture. Cook 3 minutes, carefully flip patties and cook another 3 to 4 minutes. Serve immediately.
