– COD Fillets – Butter – Chicken Broth – Wine – Cherry Tomatoes – Cilantro or Parsley
1. In a small bowl, combine all the ingredients for the seasoning. Combine the salt, pepper, cumin, paprika, garlic and chili powder.
2. Season cod on all sides. 3. In a skillet, over med heat, add the broth, wine and cherry tomatoes, cook 5 minutes or until tomatoes start to burst and release juices.
5. Once butter melts add the cod. Cook over medium/high heat 3-4 minutes on each side, flipping halfway through the cooking. 6. Pour sauce over cod. Add fresh chopped herbs and serve.
