Ingredients

  • 8 oz dry pasta
  • 2 Tbsp olive oil
  • 2 pints cherry or grape tomatoes
  • 1 red onion quartered
  • 6 garlic cloves
  • 4 Tbsp butter
  • 1/2 tsp salt or to taste
  • ¼ tsp fresh pepper or to taste
  • ½ tsp red pepper flakes optional
  • 1/4 cup reserved pasta water
  • 1/4 cup heavy cream
  • 1 boursin cheese garlic and herbs
  • 1/4 cup lightly packed basil
  • 1/2 cup parmesan cheese grated

Instructions

  • Cook pasta according to package instructions in salted water.
  • Meanwhile, add the oil, tomatoes, red onion, garlic, and butter to a large skillet and sauté over medium heat.
  • Once tomatoes and onions are tender, season with the salt, pepper, and pepper flakes.
  • Add the leftover pasta water, cream, and the boursin cheese to the pan, and stir to combine.
  • Add the pasta to the pan and stir to combine.
  • Garnish the pasta with fresh basil and grated parmesan cheese.
  • Serve and enjoy, friends.

Notes

  • Save the pasta water. The starchy pasta water helps create a smooth, creamy sauce and brings everything together.
  • Best served fresh. This pasta is at its creamiest and most flavorful right after cooking.
  • Storage. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating. Reheat in a skillet over low heat until warmed through. Add a splash of heavy cream if needed to make the sauce creamy again.
