Parmesan crusted potatoes consist of halved new potatoes which are baked on a bed of parmesan. This method results in a crisp, golden crust on the potatoes with soft, tender insides!
Prepare the parmesan mixture by combining the grated parmesan, garlic, Italian seasoning, salt, and pepper in a small bowl.
Drizzle 1 Tbsp of oil in a 9x13-inch baking dish and spread the oil with a pastry brush.
Add the parmesan mixture into the baking dish and spread evenly.
Clean the potatoes and pat dry. Cut each one in half.
Place each potato slice into the mixture, sliced side down, pressing the potato down into the parmesan mixture.
Brush the tops of the potatoes with the remaining 1 Tbsp oil.
Bake the potatoes for 20-30 minutes uncovered until the potatoes are golden brown and crispy.
Notes
Cut potatoes evenly: Be sure that whatever kind of potatoes you use are cut uniformly so that they cook evenly. Reheat: To re-crisp the potatoes, add the potatoes into a preheated oven or air fryer until reheated.
