Cucumber Bites with Salmon

These cucumber bites with salmon make the perfect bite-sized appetizer for you holiday parties and potlucks. This simple and delicious appetizer comes together with just a few ingredients. The perfect low-calorie appetizer!

Ingredients

  • 4 oz cream cheese room temp
  • 1 Tbsp mayo
  • 1 Tbsp heavy cream
  • tsp salt
  • pinch of black pepper
  • 3 mini cucumbers or 1 English cucumber
  • 2 tsp everything bagel seasoning
  • 2 oz smoked salmon cut into smaller pieces

Instructions

  • Beat the cream cheese, mayonnaise, heavy cream, salt, and pepper until smooth and creamy. Optional: For a more straightforward application, transfer the mixture to a piping bag if desired.
  • Cut cucumbers into ½-inch spheres.
  • Pipe or add a generous dollop of the cream cheese mixture with a spoon.
  • Sprinkle some of the bagel seasoning over the top, then add a small piece of the salmon and sprinkle more seasoning on top.

Notes

  • Level up the filing: This is optional, but you could scoop out the center of the cucumbers and fill them up with more cream cheese filling. 
  • Add more toppings: Create a variety of cucumber bites by experimenting with different toppings. Swap salmon with cooked shrimp for a delicious shrimp bite.  
  • Store leftovers. If you have any leftovers, store them in the fridge, in an airtight container.
