Easy Apple Coleslaw Recipe (Creamy & Crunchy)

A classic apple coleslaw recipe that is crunchy, creamy, and so flavorful! The coleslaw is loaded with crispy cabbage and apples, tossed in a creamy dressing. The finishing touch is a garnish of walnuts and cranberries, which takes this salad over the top and makes it the perfect side salad.

Ingredients

  • 4 cups shredded cabbage or 1 bag coleslaw mix
  • 2 apples thinly sliced or julienned
  • 1 large carrot shredded
  • 2 Tbsp chopped green onions optional
  • 1/2 cup chopped nuts walnuts or pecans
  • 1/3 cup dried cranberries or raisins

Instructions

  • Add the cabbage, apples, green onions, almonds, and cranberries to a bowl. Gently toss to combine.
  • In a small bowl, whisk the mayo, lemon juice, honey, salt, and pepper.
  • Pour dressing over slaw and toss until coated.
  • Refrigerate for 30 minutes.
  • Serve and enjoy, friends.

Notes

  • What apples are best? Your favorite or whatever apples you have on hand will work for this recipe!
  • Prep ingredients. Julienne the apples and carrots into evenly sized pieces.
  • Taste for seasoning. Taste the slaw for seasoning before chilling in the fridge.
  • Serve. Garnish with additional nuts right before serving for maximum crunch.

  • Store leftovers. Keep leftovers tightly sealed and refrigerated for up to 3 days. Coleslaw stores better than typical salads because it’s less likely to get soggy.
