Ingredients

  • 3/4 cup quinoa uncooked
  • 2 cups cubed butternut squash
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika
  • 2 cups kale finely cut, lightly packed
  • 1/2 cup walnuts
  • 1/2 cup feta
  • 2 cups diced cooked chicken
  • 1 apple sliced into strings

Instructions

  • Cook quinoa according to package instructions.
  • In a baking sheet, add the butternut squash and toss with olive oil, salt, pepper, and paprika.
  • Roast at 400°F for 20-25 minutes, or until tender. Set aside to cool.
  • Whisk together the dressing ingredients.
  • Add the quinoa, butternut squash, kale, walnuts, apples, feta, and chicken to a large salad bowl.
  • Drizzle the dressing and toss to combine.
