Tomato Cucumber Onion Salad

- 3 large ripe tomatoes diced
- 3 mini cucumbers sliced
- ½ medium red onion thinly sliced
- 1 Tbsp fresh herbs parsley, cilantro, or dill
dressing -
- 3 Tbsp olive oil
- 1 Tbsp freshly squeezed lemon juice
- 1 tsp salt or to taste
- ¼ tsp black pepper or to taste
In a large bowl, combine the tomatoes, cucumbers, onions, and fresh herbs.
In a separate bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Pour the dressing over the salad and toss to combine.
