Ingredients

dip -

  • 15 oz ricotta cheese about 2 cups

  • 1 Tbsp honey
  • 1/2 tsp lemon zest
  • 1 Tbsp freshly squeezed lemon juice
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper

garnish -

Instructions

  • To a food processor (or blender), add the ricotta, olive oil, honey, lemon zest, lemon juice, salt, and black pepper.
  • Blend and pulse until the mixture is smooth. Use a spatula to scrape down the sides, if needed.
  • Transfer the whipped ricotta to a serving bowl.
  • Drizzle with the honey, add pepper flakes and herbs,
  • Serve with crostini, baguette, or pita chips.

Notes

  • Use the right ricotta. For the creamiest, richest flavor, use full-fat ricotta when making this dip.
  • Blend until smooth. When whipping the ricotta, blend until the texture becomes light, airy, and completely smooth.
  • Serve at room temperature. This ricotta dip tastes best when served slightly softened, so assemble it just before serving.
  • Storage. Store leftover ricotta dip in an airtight container in the refrigerator for up to 3 days. Enjoy it chilled as a quick dip or spread for sandwiches.
  • Freezing. Freezing is not recommended, as it can affect the texture of the ricotta.
