Cut bacon into bite-sized pieces. Cook until browned, remove from pan.


Meanwhile, whisk together the eggs. Add in the half and half and season with salt and pepper.

Heat butter and oil in a pan, pour in the scrambled eggs. As the eggs are cooked, push edges of the mixture into the center allowing the uncooked liquid to flow underneath.

Add the sauteed mushrooms and bacon to half of the omelet and top with the cheese. Fold closed.
