Romaine Tomato Avocado Salad

Healthy, quick and easy salad with romaine, cucumbers, tomatoes and avocado with a light oil and lemon dressing.

Ingredients

Salad

  • 1 large romaine
  • 1/3 cup cilantro
  • 1 avocado
  • 1 cup cherry tomatoes
  • ½ English cucumber
  • ½ red onion

Dressing

  • 4 Tbsp olive oil
  • 2 Tbsp fresh squeezed lemon juice*
  • ½ tsp salt
  • ¼ tsp ground black pepper

Instructions

  • Chop romaine and cilantro. Slice onion, avocado and cucumber. Half tomatoes. Lightly mix.
  • Combine olive oil, lemon, salt and pepper. Drizzle over salad and combine. Serve immediately. Enjoy!

Notes

If you want to prep this earlier, you may do so, just slice the avocado and add the dressing right before serving. It will get soggy quickly. Don't pour all of the dressing at once, add as much as needed. :)
