This has to be one of my favorite salads to make for a simple dinner or when we have a house full of guests. I love this salad so much because all of the ingredients are always on hand and can be quickly thrown together, especially if you don’t have a lot of time. The amazing combination of romaine, avocado, cucumber, tomato and red onion drizzled with olive oil and lemon is just superb. Oh and you cannot forget the kick my favorite herb cilantro gives it!. It’s one of those salads you can eat without limiting yourself and not feeling guilty that you ate a huge bowl. It’s so good that you will have a hard time stopping yourself. This salad always reminds me of summer. Summer days with fresh vegetables and herbs growing in the garden. We live in a very small city (and by small I mean population of 3,000), ha! During the summer, many families have their own garden and fresh vegetables. Last two years I didn’t do my own garden. It was so hard with a newborn and juggling four other children. However, my mama and sister had their own garden. I loved going over to their house and picking some fresh vegetables. This year we are going to be planting our garden again. I miss it so much! Do any of you have your own garden? What is your favorite vegetable to plant and enjoy? Mine is definitely cucumbers! You cannot beat the taste of a homegrown cucumber.

If you have not tried my Summer Salad, you really should, it has almost the same ingredients but with a homemade avocado dressing.

*If you want the taste more “lemony” then add the 2 Tbsp, if you want it a plainer taste, just use 1 ½ Tbsp.

{Note: If you want to prep this earlier, you may do so, just slice the avocado and add the dressing right before serving. It will get soggy quickly. Don’t pour all of the dressing at once, add as much as needed. :)..}

Ingredients for Romaine Tomato Avocado Salad:

1 large romaine

1/3 cup cilantro

1 avocado

1 cup cherry tomatoes

½ English cucumber

½ red onion

4 Tbsp olive oil

1 1/2 – 2 Tbsp fresh squeezed lemon juice*

1/2 – 3/4 tsp salt

1/8 – 1/4 tsp pepper

Serves: 4

How to make Romaine Tomato Avocado Salad:

Chop romaine and cilantro. Slice onion, avocado and cucumber. Half tomatoes. Lightly mix.

Combine olive oil, lemon, salt and pepper. Drizzle over salad and combine. Serve immediately. Enjoy!

Ingredients
Salad
  • 1 large romaine
  • 1/3 cup cilantro
  • 1 avocado
  • 1 cup cherry tomatoes
