Chicken with tomatoes, eggs, bacon and avocado make for a great combination for a salad recipe. Not only a great combination for a salad but a sandwich as well.

Do any of you still have leftover eggs from your Easter? Not sure about you but our little munchkins love playing war with the eggs. You know, where you hit two eggs against each other to see which will break first? Yah, so our munchkins love to do that. The only problem is; they do not like to eat the actual egg after the winner is announced. So, here I am with loads and loads of cooked eggs. This salad has been on repeat all week long.

To enjoy as a side salad, be sure to chop all of the ingredients into larger pieces (like shown in the images below). However, I absolutely love this salad as a sandwich. Let me tell you what, the combination of these ingredients is like party in your mouth. So, so good. When chopping the ingredients to enjoy as a sandwich, be sure to chop finely.

Chicken Avocado Egg Bacon Salad

I know there may be those of you that are a bit skeptical of the ingredients involved and hold back on trying the recipe. I tell you what, just give the recipe a try and be amazed yourself. You will become a fan and LOVE the recipe. You can also serve this salad with homemade baguette crisps. See THIS post for the recipe to make the baguette crisps. If serving this salad for a party, serve the baguette on the side of the salad. You bite into not only the salad but toasted baguette pieces. A keeper – for sure!

Lastly, this salad can be enjoyed as a lettuce wrap.

Chicken Avocado Egg Bacon Salad

Serves: 4-6

Ingredients:

2 (10 oz each) cans chicken, drained

1 cup cherry tomatoes, halved

1/2 small red onion, sliced

1 small avocado, cubed

1/2 celery stick, finely chopped

6 slices bacon, cooked

3 boiled eggs, cubed

dressing-

1/3 cup mayonnaise

1 1/2 Tbsp sour cream

1/2 tsp Dijon

2 Tbsp olive oil

2 garlic cloves, minced

1 tsp lemon juice

1/4 tsp salt

1/8 tsp pepper

Serves: 4-6

Directions:

Combine all of the ingredients for the dressing, mix well.

Combine chicken, tomatoes, red onion, celery, bacon, and eggs. Add 3/4 of the dressing and mix. Add avocado and gently toss. If needed, add remaining salad dressing. Add additional salt and pepper to taste, if desired.

Amazing chicken salad recipe with avocado, eggs, bacon and tomatoes. Enjoy as a salad or sandwich.

Ingredients
  • 2 canned chicken 10 oz each, drained
