Ingredients

Chicken seasonings-

  • 1 chicken breast
  • ¼ tsp ground paprika
  • ¼ tsp garlic powder
  • ½ tsp table salt
  • tsp ground pepper
  • 1 Tbsp oil for sauteing

Salad-

  • 1 romaine lettuce hearts, chopped
  • 8 oz cherry tomatoes, halved
  • 2 mini cucumbers, sliced
  • 1/2 large red onion, sliced
  • 1/2 avocado, sliced

Dressing-

  • 1/3 cup Olive oil or canola oil
  • ½ tsp Italian seasoning
  • 1 garlic clove, minced
  • 2 Tbsp fresh lemon juice
  • ½ tsp table salt
  • ¼ tsp ground black pepper

Instructions

  • Beat chicken breast until even in thickness. In a bowl, combine seasonings for chicken. Season both sides of the chicken.
  • On high heat, heat 1 Tbsp oil in a skillet. Sear chicken 2 minutes on both sides. Turn heat down to low, close lid of the skillet and cook another 5-6 minutes, until chicken is tender.
  • Meanwhile, in a small bowl, combine the ingredients for the dressing and mix until well incorporated.
  • Add all of the salad ingredients to a bowl. 
  • Slice cooked chicken. Add to salad.
  • Drizzle dressing over salad. Toss gently. Enjoy!
