Ingredients
chicken sandwich-

lbs
chicken breasts, boneless skinless (about 2 breasts)
4
burger buns
desired toppings
buttermilk marinade for crispy chicken-
1
cup
buttermilk

salt

ground black pepper
chicken breading-

cup
all-purpose flour, measured then sifted
1/4
cup
cornstarch

ground paprika

Instructions
how to marinade crispy chicken-
Cut the chicken breast half giving you 4 chicken cutlets. Beat chicken with a meat mallet so it's even in thickness.
In a
bowl
, combine the buttermilk, salt and pepper. Add the chicken fillets into the buttermilk, allow to marinate 30 minutes or overnight.
Mix together all the ingredients for the breading.
Take the chicken from the buttermilk marinade and dredge in the flour mixture.
frying chicken sandwich-
In a
Dutch oven
or large pot with a thick bottom, add enough oil to completely cover chicken breast when submerged. Heat until oil is about 350°F.
Once hot, add the chicken and fry until golden and crsipy, about 3-4 minutes per side.
Transfer chicken to a place lined with a paper towel.
While chicken is frying, prep all the toppings. Assemble sandwich.
