This avocado and egg salad is the perfect creamy egg salad, loaded with crisp bacon and a refreshing garlic dressing. This is the ideal salad to whip up in less than 15 minutes, making for a quick and easy lunch.

Ingredients

  • 3 eggs boiled diced
  • 2 pieces bacon chopped
  • 1 avocado cubed

dressing-

  • 1 garlic clove minced
  • 3 Tbsp mayo
  • 1 Tbsp fresh herbs
  • 1 Tsp lemon
  • ¼ tsp dijon mustard
  • Dash salt and pepper or to taste

Instructions

  • Add the eggs, bacon, and avocado to a salad bowl.
  • In a bowl, mix the ingredients for the dressing. Add the dressing to the salad bowl and toss.
  • Serve and enjoy.

  • Add-ins: Add greens to this egg salad to make it extra nutritious. 
  • Add protein: Add chicken to this egg salad to make it extra filling!
  • Store leftovers: The avocado can turn brown if stored for an extended period. To avoid this, add the avocado to the individual servings to keep the main egg salad fresher longer.
