Breakfast Tacos Recipe (Brunch favorite)

Classic breakfast tacos make for a meal you’re going to be excited to start your day with! Soft tortillas, loaded with juicy sausage, eggs, and all of your favorite toppings. Enjoy as a fun family breakfast, or even a brunch with friends. Making breakfast tacos from scratch couldn’t be easier!

Ingredients

  • 8 oz ground sausage
  • 6 large eggs
  • 2 Tbsp half and half
  • salt and pepper to taste
  • 6 small tortillas flour or corn
  • Taco toppings of choice

Instructions

  • Cook the meat. In a pan, cook the ground sausage and break it up with a meat chopper. Once cooked, remove the meat from the skillet and transfer it to a serving dish, and cover to keep warm.
  • Prepare eggs. In a bowl, whisk the eggs, half-and-half, and seasoning.
  • Cook. Add the egg mixture to the same pan and cook until scrambled and cooked through. Add the eggs to a serving dish and cover to keep warm.
  • Heat tortillas. Warm the tortillas in a pan, then add them to a dish and cover with a damp paper towel to keep them from going stale.
  • Toppings. Arrange all of the toppings alongside your eggs, protein, and tortillas.
  • Serve and enjoy, friends!

Notes

  • Warm the tortillas. Heating the tortillas before serving makes a big difference. Warm tortillas are softer, more flavorful, and less likely to tear when filled.
  • Cook the eggs gently. Scramble the eggs just until they're set, keeping them soft, fluffy, and delicious.
  • Load up on toppings. Fresh toppings like avocado, salsa, cilantro, tomatoes, and cheese add extra flavor, texture, and color to every taco.
  • Storage. For the freshest leftovers, store the eggs, meat, tortillas, and toppings separately in the refrigerator for up to 2 days.
  • Reheat. Warm the eggs and sausage in a skillet over low heat, and heat fresh tortillas before assembling your tacos.
