Broccoli Cauliflower Salad

This broccoli cauliflower salad is the crispiest and delicious summer salad! Fresh broccoli and cauliflower flowers with bacon, sunflower seeds and sweet craisins in a rich and creamy creamy tangy dressing.

Ingredients

  • 1/2 pack bacon, chopped & cooked (8 oz)
  • 3 cups raw cauliflower, small florets
  • 3 cups raw broccoli, small florets
  • 1/2 medium red onion, finely chopped
  • 1 cup mild cheddar, grated
  • 1/4 cup sunflower seeds
  • 1/3 cup craisins (dried cranberries)

Dressing-

  • 1 cup mayonnaise
  • 1/3 cup granulated sugar
  • 1/4 cup distilled white vinegar

Instructions

  • Cook the chopped bacon in a pan until crispy. Set the bacon on a paper towel to cool.
  • Cut the broccoli and cauliflower into small florets. Finely chop the onion.
  • Add broccoli, cauliflower, onion, cheese, sunflower seeds, cranberries, and bacon to a large salad bowl.
  • In a separate bowl, whisk together the salad dressing ingredients.
  • Add the dressing to the salad bowl, and toss.
  • Serve, and enjoy!

Notes

  • This broccoli stores well because of the broccoli and cauliflower! Meal prep this salad and enjoy as a quick and easy lunch. 
  • Store leftover salad in the refrigerator for up to 3 days.
