Cottage Cheese Pancakes Recipe

This cottage cheese pancake recipe makes the best high-protein breakfast. You wouldn’t think a sweet breakfast could be so healthy, but here we are! These pancakes are low in sugar and packed with protein, providing a satisfying breakfast without the guilt.

Ingredients

  • 1 cup full-fat cottage cheese
  • 3 large eggs
  • 3 Tbsp sugar
  • 1 tsp vanilla extract
  • 2 Tbsp milk
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 Tbsp olive oil
  • 1 Tbsp unsalted butter

Instructions

  • In a large bowl, combine the cottage cheese, eggs, sugar, vanilla, and milk. Add the flour and baking soda and stir to combine.
  • Heat a large skillet over medium heat. Add 1/2 Tbsp oil and 1/2 Tbsp butter to a large pan or griddle.
  • Once hot, scoop the batter into the pan. I prefer to use a ¼ cup measuring cup for evenly sized pancakes.
  • Cook until the edges are dry and bubbles begin to form on the surface of the pancake.
  • Cook pancakes until bubbles start to appear, about 1 minute. Flip and cook 2-3 more minutes, until crispy and the center is cooked through.
  • Serve pancakes warm, topped with your desired toppings.

Notes

  • To get fluffy pancakes, be sure not to overmix your batter. Fold the flour into the wet batter until no streaks of flour remain and leave it alone. 
  • Use a pancake griddle to achieve the perfect golden-brown crust on your pancakes. 
  • Top your pancakes with fresh fruit, honey, or maple syrup for the most delicious combination. 
  • Store leftover pancakes in the fridge and enjoy for the next 3 days.
