- Crispy golden pancakes: Ever wonder how to get those crisp edges on a pancake? Well, the key is in the cooking! Using a mixture of olive oil and butter allows you to achieve a crisp crust that is both golden brown and flavorful. Chef’s tip: If you don’t want crispy pancakes, omit the butter and use oil instead.
- Tall pancakes: Nothing beats a large and fluffy pancake, and I have the best tip for that! Say hello to mason jar lids! Something you probably already have at home can be used to give you those tall, restaurant-style pancakes. Simply put the lids in the pan, and spoon the batter into them. Once cooked on one side, remove before flipping.
- Best pan: Though you can use a skillet for pancakes, I like my electric griddle. I can get all of the pancakes much quicker.

Full-fat vs. low-fat cottage cheese: For a “healthier pancake,” you might want to use low-fat cottage cheese; however, full-fat cottage cheese provides a richer batter that will naturally have a better flavor. Ultimately, this is a matter of personal preference, and both options will work well in this recipe. - Eggs – The eggs bind the remaining ingredients and adds structure.
- Sugar – The best part of this recipe is how low the sugar is! With only three tablespoons of sugar for the entire batter! Each serving of pancakes is just a few grams of sugar!

Farmer’s Cheese vs Cottage Cheese:
The classic Slavic pancakes, also known as syrniki, are traditionally made with farmer’s cheese. While both are delicious, the main difference is that farmer’s cheese is wrung out, eliminating the whey from the cheese. As a result, cottage cheese is higher in protein, which in turn makes for a healthier and more filling pancake.

- Add chocolate: Load up your batter with chocolate chips just like our chocolate chip pancake recipe!
- Blueberry lemon: We love our blueberry lemon pancakes, and you can easily make a cottage cheese version! Add fresh blueberries and lemon to the batter to make the perfect flavorful pancakes.
- Berries: You can add your favorite fresh berries to the batter for a burst of flavor: strawberries, raspberries, blackberries, or blueberries will all work.

Gluten-Free Cottage Cheese Pancakes:
These pancakes can be made gluten-free using cottage cheese. Whether you’re avoiding flour or can’t eat it, you can still enjoy these pancakes!
- Gluten-free all-purpose flour: Your favorite gluten-free flour will work for these cottage cheese pancakes.
- Almond flour: It can also be used as a substitute for flour to create a delicious pancake.
How to Make Cottage Cheese Pancakes

- Combine wet ingredients. In a large bowl, whisk all of the wet ingredients until smooth.

2. Add dry ingredients: Add the flour and baking powder to the same bowl and fold until no streaks of flour remain.

3. Cook. Heat a pan with oil and butter over medium heat. Use a measuring cup to pour the batter into the pan. Once the top of the pancakes begins to bubble, flip them over and cook until they are cooked through.

Tips for Storage and Make-Ahead
- Leftovers. The leftover pancakes hold up great in the refrigerator. Seal in an airtight container and store in the fridge for up to 3 days. Reheat in a pan, or enjoy them cold with some jam!
- Make it in advance. Cook batches of these pancakes to enjoy throughout the week! Double, or even triple, the recipe, then add to a freezer-safe container. Separate the pancakes with parchment paper and store them in the freezer for up to 3 months.
To reheat, simply remove the individual pancake (or two) and add it to a warm pan. Heat on both sides until warm throughout.

- In a large bowl, combine the cottage cheese, eggs, sugar, vanilla, and milk. Add the flour and baking soda and stir to combine.
- Heat a large skillet over medium heat. Add 1/2 Tbsp oil and 1/2 Tbsp butter to a large pan or griddle.
- Once hot, scoop the batter into the pan. I prefer to use a ¼ cup measuring cup for evenly sized pancakes.
- Cook until the edges are dry and bubbles begin to form on the surface of the pancake.
- Cook pancakes until bubbles start to appear, about 1 minute. Flip and cook 2-3 more minutes, until crispy and the center is cooked through.
- Serve pancakes warm, topped with your desired toppings.
Notes
- To get fluffy pancakes, be sure not to overmix your batter. Fold the flour into the wet batter until no streaks of flour remain and leave it alone.
- Use a pancake griddle to achieve the perfect golden-brown crust on your pancakes.
- Top your pancakes with fresh fruit, honey, or maple syrup for the most delicious combination.
