Cucumber Sandwiches (Tea Sandwiches)

These cucumber sandwiches make the perfect easy tea sandwiches. Soft white bread is layered with a flavorful cream cheese and crisp cucumbers.

Ingredients

  • 8 oz cream cheese
  • 3 Tbsp mayonnaise
  • 2 tsp fresh dill divided
  • 2 tsp lemon juice
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 baguette cut into ¼-inch slices
  • 1 English cucumber sliced thin

Instructions

  • To a bowl, add the cream cheese, mayo, dill, lemon juice, garlic, salt and pepper.
  • Beat the mixture until smooth.
  • Spread the cream cheese mixture onto one side of each piece of sliced baguette.
  • Add a few slices of cucumber per baguette and top with remaining dill.
  • Serve immediately or cover and refrigerate for up to one day.

Notes

  • Storage. Wrap the sandwich tightly in plastic wrap and store for 1-2 days. 
  • Add protein: Bulk up this sandwich by adding tuna, ham, or turkey slices! You can even add sauteed shrimp on top of the sandwiches.
  • Avocado spread: Add half of an avocado to the mixture for an avocado spread
