Easy Cottage Cheese Egg Bites

These cottage cheese egg bites are the best quick and easy breakfast. These egg bites are fluffy and loaded with crispy bacon, as well as an abundance of cheese! The perfect protein-filled breakfast that is so easy to make.

Ingredients

  • 8 large eggs
  • 1/2 tsp salt
  • ¼ tsp black pepper
  • 8 oz bacon cooked and cut into bite-sized pieces
  • 1 cup cottage cheese
  • 1 cup colby jack cheese shredded
  • 1 tbsp parsley

Instructions

  • Preheat oven to 325℉.
  • In a large mixing bowl, whisk the eggs, season with salt and pepper, and whisk again.
  • Add the bacon, cottage cheese, shredded cheese, and parsley. Stir to combine.
  • Spray a 12-cup muffin pan with cooking oil.
  • Evenly distribute the egg mixture among the cups.
  • Bake for 20-25 minutes or until the eggs have set in the center.
  • Allow the egg bites to cool for a couple of minutes, then remove them from the muffin pan while they are still warm.
  • Serve and enjoy, friends.

Notes

  • Customize egg bites: Load up these egg bites with vegetables, a variety of vegetables for a different flavor! Switch bacon for turkey bacon and breakfast sausage, or opt for a vegetarian option. 
  • Make-ahead: Make a batch of these egg bites, add them to a freezer-safe container, and freeze for up to 3 months. Reheat: Warm up egg bites in the air fryer at 350°F for 5 minutes.
  • Store leftovers: Keep leftover egg bites in an airtight container. Egg bites will keep fresh for up to 5 days.
