These honey roasted carrots make the perfect side dish recipe! Tender carrots are roasted in a sweet garlic butter, infusing the garlic flavor into every bite. This side dish will complement any meal and is perfect for potlucks, as you most likely already have these ingredients on hand!
Peel the carrots, quarter them, and chop them into 1 ½ inch pieces.
In a warm pan, melt butter and add minced garlic, along with fresh herbs, salt, and pepper.
Cook until the garlic is fragrant, and mix in the honey.
Once incorporated, remove the sauce from the heat.
Add the carrots to the pan and toss.
Line a baking dish with parchment paper and add the carrots.
Add the baking dish to a preheated oven at 400°F and roast for 35-40 minutes or until the carrots are tender.
Notes
Add protein: Bulk up these glazed carrots with the addition of crispy bacon.
Garnish: Top the cooked carrots with a balsamic glaze for an extra flavor boost. If you’re doing it, reduce the honey amount by a little so that the carrots aren’t too sweet.
