These honey-glazed carrots make an elegant side dish for thanksgiving and christmas. Not only do they have the ideal nostalgic flavor, but they also pair perfectly with your favorite side dishes, like bacon roasted brussel sprouts, or the hearty green bean casserole

Ingredients for Honey Roasted Carrots

Honey-glazed carrots are so easy to make, you most likely have these ingredients at home! 

  • Carrots – Whole carrots peeled and chopped into 1½-inch pieces, make the perfect bite-sized option. You can also use baby carrots and skip the chopping!
  • Butter – Melted butter adds an incredible texture to the carrots as well as a rich flavor. 
  • Fresh garlic – Minced garlic is an essential ingredient in these glazed carrots, as it adds a great, yet subtle flavor – not the same as garlic powder!
  • Herbs – Your favorite fresh herbs make the perfect addition to this side dish. You can add parsley, thyme, or rosemary for an extra depth of flavor, as well as a beautiful garnish. 
  • Honey – Honey helps the carrots caramelize, creating a delicious glaze on these roasted carrots. You can also use maple syrup instead!

  • A 9×13 baking dish fits 2 lbs of carrots perfectly. If making a smaller batch, use a smaller baking dish. 

Substitutions and Variations

  • Add protein: Bulk up these carrots with cooked bacon bits for some extra protein and flavor. 
  • Nuts: If this sounds unusual, then I urge you not to knock it until you try it. The addition of candied walnuts takes honey-glazed carrots to the next level!
  • Balsamic glaze: Drizzle the carrots with a homemade balsamic reduction for an out-of-this-world flavor combo. Tip: If adding balsamic glaze, reduce the honey to 2 Tbsp since the glaze adds sweetness.

How to Make Honey Roasted Carrots in the Oven

  1. Prep carrots. Peel the carrots and quarter them into long carrots. Chop the carrots into 1 ½ inch long strips. 
  2. Make sauce. In a warm pan, melt the butter. Add the minced garlic and seasoning and cook until the garlic is fragrant. Stir in the honey to create a uniform sauce. Add the carrots to the pan and toss in the sauce. 
  3. Roast. Transfer the carrots to a baking dish and roast at 400°F for 35–40 minutes, or until tender and caramelized.

1. Add the sauce-tossed carrots into the crockpot and cook on low for 4-6 hours or until the carrots are tender. 

Stovetop

Store & Reheat 

  • Storage. Keep leftovers of honey carrots in the refrigerator for up to 3 days. 
  • Reheat. Warm up the carrots in a warm pan or in the air fryer for a crispy result. 
  • Freeze. Store these carrots for longer by freezing them! Add the carrots to a freezer-safe container, and store for 3 months. Reheat: Add the frozen carrots to a pan and cover with a lid. Cook over low-medium for 10 minutes or until reheated.

Ingredients

  • 2 lbs carrot

honey garlic butter sauce-

  • 4 Tbsp unsalted butter room temp
  • 3 garlic cloves minced
  • 2 Tbsp fresh herbs finely chopped
  • ¼ tsp salt
  • tsp ground black pepper
  • 1/4 cup raw honey

Instructions

  • Peel the carrots, quarter them, and chop them into 1 ½ inch pieces.
  • In a warm pan, melt butter and add minced garlic, along with fresh herbs, salt, and pepper.
  • Cook until the garlic is fragrant, and mix in the honey.
  • Once incorporated, remove the sauce from the heat.
  • Add the carrots to the pan and toss.
  • Line a baking dish with parchment paper and add the carrots.
  • Add the baking dish to a preheated oven at 400°F and roast for 35-40 minutes or until the carrots are tender.

Notes

  • Add protein: Bulk up these glazed carrots with the addition of crispy bacon. 
  • Garnish: Top the cooked carrots with a balsamic glaze for an extra flavor boost. If you’re doing it, reduce the honey amount by a little so that the carrots aren’t too sweet. 
  • Refrigerate: Store leftover honey carrots in the fridge for up to 3 days.
