Shrimp Dip Recipe

This shrimp dip recipe makes the best dip of all time. Cheesy melted goodness, packed with juicy shrimp and fresh tomatoes, each bite leaves you wanting more. Make this buffalo dip as an appetizer for dinner or a game day!

Ingredients

  • 3 Tbsp unsalted butter divided
  • 1 tsp oil
  • 1 1/2 lbs raw shrimp
  • 8 oz cream cheese room temp
  • 3 Tbsp plain Greek yogurt
  • 1/3 cup hot sauce
  • 1/2 cup ranch dressing
  • 1/4 cup crumbled blue cheese
  • 1 1/2 cup shredded colby jack cheddar cheese
  • 1/2 cup cherry tomatoes chopped

Instructions

  • Heat a skillet over medium heat and melt 1 tablespoon of butter and 1 teaspoon of oil. Once the skillet is hot, add the shrimp in a single layer and cook on both sides until the shrimp are pink and cooked through.
  • Chop the shrimp up into bite-sized pieces.
  • In a bowl, beat together the cream cheese and 2 tbsp of butter.
  • Add the yogurt, hot sauce, ranch, blue cheese, and shredded cheese (reserving some cheese for topping) to the bowl and mix well.
  • Add the chopped tomatoes and shrimp, and fold in with a spatula.
  • Transfer the mixture into a casserole dish and top with extra cheese. Cover the dish with foil.
  • Bake in the oven at 355°F for 30 minutes, or until the mixture is bubbling.
  • Serve, and enjoy friends!

Notes

  • Assemble the dip in advance and refrigerate for up to 2 days before baking. 
  • Refrigerate the leftovers for up to 3 days. 
  • To reheat the shrimp dip leftovers, place the dish in the oven and bake for a few minutes, or until bubbly. 
  • Serve the dip with crackers, chips, and crostini for an addictive combination.
