This shrimp fajitas recipe makes the perfect restaurant-quality dinner. It takes 30 minutes and a few simple ingredients. Juicy shrimp in a soft tortilla topped with homemade cilantro lime sauce are perfect.
Add all of the sauce ingredients into a bowl and mix. (Optional: Use an immersion blender to blend for a smooth consistency.)
Cook fajitas -
Slice peppers and onions into thick strands.
In a skillet, heat oil and cook the vegetables until soft and tender. Remove the vegetables from the skillet and set them aside.
Pat the shrimp dry and devein.
Season the shrimp with taco seasoning.
Add the oil and butter to the same skillet. Heat the pan until hot, and the butter is melted.
Add the shrimp in a single layer and cook the shrimp for 2 minutes per side.
Add the veggies back to the skillet and reheat.
Warm the tortillas in a pan with no oil.
Add the shrimp and vegetables to a warm tortilla and top with cilantro sauce.

Leftover fajitas can be stored in an airtight container in the fridge for 3-5 days.
