Shrimp Fajitas

This shrimp fajitas recipe makes the perfect restaurant-quality dinner. It takes 30 minutes and a few simple ingredients. Juicy shrimp in a soft tortilla topped with homemade cilantro lime sauce are perfect.

Ingredients

  • 2 medium peppers color of choice
  • 1/2 onion
  • 1 Tbsp oil olive or canola
  • 1 lb raw shrimp
  • 1 Tbsp taco seasoning
  • 2 Tbsp unsalted butter
  • 6 medium tortillas or the desired size
  • 3 garlic cloves minced

cilantro lime sauce-

  • 1/3 cup mayonnaise
  • 3 Tbsp sour cream
  • 1 garlic clove minced
  • 1/4 cup chopped cilantro
  • 2 Tbsp lime juice

Instructions

Prepare the sauce -

  • Add all of the sauce ingredients into a bowl and mix. (Optional: Use an immersion blender to blend for a smooth consistency.)

Cook fajitas -

  • Slice peppers and onions into thick strands.
  • In a skillet, heat oil and cook the vegetables until soft and tender. Remove the vegetables from the skillet and set them aside.
  • Pat the shrimp dry and devein.
  • Season the shrimp with taco seasoning.
  • Add the oil and butter to the same skillet. Heat the pan until hot, and the butter is melted.
  • Add the shrimp in a single layer and cook the shrimp for 2 minutes per side.
  • Add the veggies back to the skillet and reheat.
  • Warm the tortillas in a pan with no oil.
  • Add the shrimp and vegetables to a warm tortilla and top with cilantro sauce.
  • Serve, and enjoy friends!

Notes

  • Serve the fajitas family-style for an interactive dinner. Put all of the ingredients in the middle of the table, and have everyone assemble their own tacos! It’s fun and delicious! 
  • Serve fajitas with a variety of toppings! We love to add guacamole, pico de gallo, and shredded cheese. 
  • Leftover fajitas can be stored in an airtight container in the fridge for 3-5 days.
