Total Time: 45 minutes
Servings: 4

Ingredients

  • 4 potatoes 1 ½ pounds
  • 1/2 tsp fine salt
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 cup virgin olive oil

Instructions

  • Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper.
  • In a small bowl combine the paprika, garlic and onion powder, salt and pepper.
  • Wash potatoes thoroughly and dry the potatoes.
  • Cut the potatoes lengthwise, then cut each half into 4-5 (1/2-inch-thick) wedges.
  • Rinse the potatoes under cold water to remove starch. (If you are making the potatoes in advance, add potatoes to cold water and refrigerate until ready to use.)
  • Pat the wedges dry, add them to a large bowl, sprinkle with half of the seasoning, toss, and season again.
  • Add half of the oil, toss and add the remaining oil and toss again.
  • Place the potatoes in a single layer on the baking sheet and roast for 20 minutes. Flip the potatoes and roast again until crispy and golden-brown, 14-15 minutes more.

Notes

  • Don’t overcrowd. When laying the fries out on a baking sheet,  be sure to leave space between the fries.
  • Storage. Leftover potatoes can be kept in the fridge and store in an airtight container.
  • Reheat. Bake the leftover wedges in the oven at 350°F for about 10 minutes.
