Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper.
In a small bowl combine the paprika, garlic and onion powder, salt and pepper.
Wash potatoes thoroughly and dry the potatoes.
Cut the potatoes lengthwise, then cut each half into 4-5 (1/2-inch-thick) wedges.
Rinse the potatoes under cold water to remove starch. (If you are making the potatoes in advance, add potatoes to cold water and refrigerate until ready to use.)
Pat the wedges dry, add them to a large bowl, sprinkle with half of the seasoning, toss, and season again.
Add half of the oil, toss and add the remaining oil and toss again.
Place the potatoes in a single layer on the baking sheet and roast for 20 minutes. Flip the potatoes and roast again until crispy and golden-brown, 14-15 minutes more.
