Parmesan Truffle Fries Recipe
Truffle fries are the perfect gourmet side that will go along with any meal. These fries are thin and crispy, but the best part is the garnish. Fresh herbs and grated parmesan cheese add so much flavor to these fries. Serve fries with homemade garlic aioli for the best combination.
Prepare 1 portion of garlic aioli, and refrigerate until ready to use.
Cut potatoes into ¼” strands and add to cold water.
Add enough oil to a Dutch oven to cover the fries when frying.
Once oil is hot, pat dry with a paper towel and fry in hot oil until fries are crispy, 3-4 minutes.
Remove the fries from the oil and place them in a bowl lined with a paper towel so excess oil may be removed.
Season the fries with salt and pepper and toss.
Add the fries to the serving bowl and top with the grated parmesan and herbs.
Dip truffle fries into the garlic aioli and enjoy.
- Pat the fries thoroughly dry before frying.
- Use a meat thermometer to ensure that the oil is at 375°F.
- Fry the fries in batches so as not to overcrowd the pot.
