Simple ingredients make this the perfect recipe: 

  • Potatoes – russet potatoes are the perfect potatoes for this fry recipe. Scrub them clean with water. 
  • Oil – any oil with a high smoke point will do.
  • Parmesan cheese – freshly grated parmesan adds the best flavor. 
  • Fresh herbs –  a mix of chopped cilantro and parsley.

How to Make Truffle Fries: 

Step-by-step instructions make this the perfect recipe:

1 – Wash and peel russet potatoes.

2 – Cut potatoes into ¼” strands and add to ice-cold water.

3 – Pat the potato slices dry with a paper towel. Add oil to a pot and heat it to 375°F, measuring using an oil thermometer. You can also use a deep fryer.

4 – Add the potato strands to the hot oil and fry for 3-4 minutes.

5 – Once golden brown, remove the fries from the oil and put them into a large bowl lined with a paper towel. Season fries with salt and pepper while hot. Taste and add more salt if needed.

6 – Add the fries to a serving bowl and finish with freshly grated parmesan and fresh herbs. Mix up some garlic aioli and serve while hot.

How to Air Fry Truffle Fries:

Add the fries to an air fryer basket. Arrange in a single layer and bake at 380°F for 12-15 minutes or until crispy. 

Expert Tips for Making the Perfect Fries:

  • Once the potatoes are cut, submerge them in an ice bath for about ten minutes. This will remove some of the starch. 
  • Pat the fries fully dry to get the perfect golden-brown fries. 
  • Temperature is important. Make sure the oil is at 375°F for the perfect frying. 
  • You can also double fry the fries for an extra crispy fry. 
  • Make sure to fry the fries in batches so as not to overcrowd the pot. This will cause the oil to lower in temperature and be too cold.

Do I need to peel the potatoes? 

The skin can be left on the potatoes. Be sure to wash the potatoes thoroughly.

Can these fries be made in the oven? 

Use our oven-baked fry recipe and bake the potatoes accordingly. Top with garnishes and enjoy!

Can I use pre-shredded parmesan cheese?

Freshly grated parmesan cheese adds the best flavor, but you can also use pre-shredded parmesan cheese. 

Store & Reheat 

  • Storage. Leftover fries can be stored in an airtight container in the fridge for up to 3 days. 
  • Reheat. Lay out the leftover fries on a baking sheet and bake in the oven at 350°F until reheated. 
  • Freeze. We do not recommend freezing these truffle fries.

Instructions

  • Prepare 1 portion of garlic aioli, and refrigerate until ready to use.
  • Cut potatoes into ¼” strands and add to cold water.
  • Add enough oil to a Dutch oven to cover the fries when frying.
  • Once oil is hot, pat dry with a paper towel and fry in hot oil until fries are crispy, 3-4 minutes.
  • Remove the fries from the oil and place them in a bowl lined with a paper towel so excess oil may be removed.
  • Season the fries with salt and pepper and toss.
  • Add the fries to the serving bowl and top with the grated parmesan and herbs.
  • Dip truffle fries into the garlic aioli and enjoy.
