It’s zucchini season and we are loving it. From canning for winter to tarts and casseroles, zucchini is so versatile. I particularly love this Zucchini Spread (Irka). It can be enjoyed on toast for breakfast with a hot cup of tea. My favorite way to enjoy this spread is over toast with sliced  avocado, an egg and loaded with the spread. So delicious. On repeat. Every morning.. 🙂 It’s especially great for those you that get up early to make breakfast for your hubby. Takes about 5 minutes, breakfast is served and you two have time to share a devotion and enjoy a few minutes of quiet before the craziness of the day begins. 🙂

*Herbs are optional but some dill and either parsley or cilantro does wonders! 🙂

Ingredients for Zucchini Spread (Ikra)-

2 medium zucchini (1 1/2 lbs), grated

2 medium carrots, grated

1 large sweet onion, finely chopped

2 large tomatoes, grated

4 garlic cloves, minced

1 tsp salt

1/2 tsp sugar
1/4 tsp pepper

4 Tbsp oil

Herbs to taste*

How to make Zucchini Spread (Ikra)-

Grate zucchini. Grate carrots and finely chop onion. Grate tomato.

In a deep skillet (or Dutch oven), heat oil on medium/high heat. Add carrots and onion, saute 10 minute, stirring frequently.

Add grated zucchini. Saute 15-20 minutes, stirring frequently (until all the excess liquid is gone) and zucchini is tender.

Add grated tomato, salt, sugar and pepper and herbs. Mix everything, turn heat down down to low and let simmer another 5 minutes.
