Zucchini Spread (Ikra)

It’s zucchini season and we are loving it. From canning for winter to tarts and casseroles, zucchini is so versatile. I particularly love this Zucchini Spread (Irka). It can be enjoyed on toast for breakfast with a hot cup of tea. My favorite way to enjoy this spread is over toast with slicedย  avocado, an egg and loaded with the spread. So delicious. On repeat. Every morning.. ๐Ÿ™‚ It’s especially great for those you that get up early to make breakfast for your hubby. Takes about 5 minutes, breakfast is served and you two have time to share a devotion and enjoy a few minutes of quiet before the craziness of the day begins. ๐Ÿ™‚

*Herbs are optional but some dill and either parsley or cilantro does wonders! ๐Ÿ™‚

Valentina,I made this yesterday and Oh My Word….Delicious!! It reminds me of a spread my Oma used to make when we still lived in Romania. I added hungarian hot peppers to my mixture. And I just wanted to say Thankyou. I also froze some and took the sample out today. Happily it freezes beautifully. Making more for this winter. So glad I found your blog.

I love this spread, Tzivia. Grating the onion is such a good idea, especially if someone doesn’t like chunky onion. Happy New Years to you and your family as well.
