Zucchini Spread (Ikra)

A simple and delicious homemade Zucchini Spread (Ikra).  Grated zucchini and vegetables sauteed as a delicious spread served great with bread, for breakfast, or as a dinner side dish.

This classic Russian dish is such an easy recipe!  I particularly love this Zucchini Spread (Irka). The zucchini is grated and sauteed with carrots and onion in a creamy garlic tomato paste.

My favorite way to enjoy this spread is over toast with sliced avocado, an egg and loaded with the the ikra – so delicious.

  • Grate the zucchini, carrots, and finely chop the onion.
  • In a deep skillet (or Dutch oven), heat oil over medium/high heat. Add carrots and onion, saute 6 minutes, stirring frequently.
  • Add the grated zucchini. Saute 15-20 minutes, stirring frequently (until all the excess liquid is gone) and zucchini is tender.
  • Stir in the grated tomato, salt, sugar and pepper and herbs. Mix well and turn the heat down to low, let simmer another 5 minutes.
  • Enjoy friends.

Zucchini spread will stay fresh up to two weeks if refrigerated in an airtight container.

  • 2 large tomatoes, grated
  • 4 garlic cloves, minced
  • 1 tsp salt

      You can serve it warm or cold, personal preference. But most people enjoy it cold. I hope you enjoy the recipe, Janice. (P.S. Try serving the spread on a piece of toast with an egg for breakfast- so good!)

    Valentina,I made this yesterday and Oh My Word….Delicious!! It reminds me of a spread my Oma used to make when we still lived in Romania. I added hungarian hot peppers to my mixture. And I just wanted to say Thankyou. I also froze some and took the sample out today. Happily it freezes beautifully. Making more for this winter. So glad I found your blog.

    Made this on Thursday for the upcoming Sabbath on Friday and woe it was such a very big hit with me and my mom I grated the onion instead of dicing it (didn’t realize) and used little colorful grape tomatoes and wow so very tasty and seriously yummm thanx tons darlin also made the bread braid and it so very delish with homemade bread happy hols and happy New Year cheers
