Shredded chicken with sliced almonds and craisins in a creamy mayo dressing over a bed of greens with a homemade Dijon balsamic vinaigrette dressing. The combination of flavors is seriously MOUTH WATERING, delicious and SO ADDICTIVE!

This recipe is a CopyCat recipe from the restaurant BAM Healthy Cuisine. I’ve never eaten there and when ordering, asked what their most popular salad was and she told me this one, friends, it was AMAZING. That same day I went and purchased everything for the salad and had it like 3 days in a row. Yes, THAT GOOD!

What really completes this chicken salad is the homemade vinaigrette dressing. Balsamic vinegar mixed with oil, garlic and Dijon mustard is a perfect combination of flavors. It’s healthy and light and so hearty.

You can use your favorite greens, we used organic spring mix and it had a great mix of different greens. You can also just do arugula or spinach if you don’t have mixed greens.

what kind of dried fruit do I use?

Use your favorite dried fruit, or a combination of fruits (whatever you have on hand). I used craisins in the recipe. However, raisins, cherries, apricots or mangos will all work.

This salad takes like 10 minutes to completely throw together. It’s perfect for lunch and hearty enough for a light dinner.

Ingredients

  • 3 cups mixed greens
  • 10 oz chicken breast, drained
  • 3 Tbsp mayo
  • 2 Tbsp sliced almonds
  • 2 Tbsp dried fruit
  • salt & pepper, to taste

Balsamic Vinaigrette Recipe-

  • 1 1/2 tbsp balsamic vinegar
  • 3 tbsp oil
  • 2 garlic cloves, minced
  • 1 1/2 tsp Dijon mustard

Instructions

  • In a bowl, combined chicken breast, mayo, almonds and dried fruit, season with salt and pepper to taste.
  • In a seperate bowl, mix all the ingredients for the balsamic vinaigrette dressing.
  • In a serving bowl, add the mixed greens then the chicken salad and vinaigrette dressing over salad.
  • Serve.
