This Chicken Salad over Mixed Greens is a keeper recipe. Creamy chicken salad with almonds and craisins over a bed of fresh spring greens and drizzled with a homemade balsamic vinaigrette dressing to complete the salad.
Though a classic chicken salad is good in a sandwich, this version makes it so much healthier and lighter yet so filling.

This recipe is a CopyCat recipe from the restaurant BAM Healthy Cuisine. I’ve never eaten there and when ordering, asked what their most popular salad was and she told me this one, friends, it was AMAZING. That same day I went and purchased everything for the salad and had it like 3 days in a row. Yes, THAT GOOD!

how to make balsamic vinaigrette dressing-
What really completes this chicken salad is the homemade vinaigrette dressing. Balsamic vinegar mixed with oil, garlic and Dijon mustard is a perfect combination of flavors. It’s healthy and light and so hearty.
what kind of greens can I use?
You can use your favorite greens, we used organic spring mix and it had a great mix of different greens. You can also just do arugula or spinach if you don’t have mixed greens.
what kind of dried fruit do I use?
Use your favorite dried fruit, or a combination of fruits (whatever you have on hand). I used craisins in the recipe. However, raisins, cherries, apricots or mangos will all work.
