I feel rather special to be contacted by Chobani Yogurt to invite me to create a recipe using their yogurt as a key ingredient. I must be honest this was a bit of a challenge because I haven’t really had the opportunity to cook or bake with yogurt but I really enjoyed the challenge nonetheless. So many ideas ran through my mind but in the end, I knew salmon was what I wanted to work with. I love the wonderful taste Greek yogurt gives this salmon. The lemon seasoning along with spinach adds a delightful flavor, not to mention the melted cheese. This healthy recipe will become one you and your loved ones will enjoy I hope. If you like salmon, try the crab stuffed salmon recipe I have posted, it’s just as easy and delicious but add crab meat to that goodness. 🙂

{If you like mushrooms, slice 12 oz mushrooms and fry. Once cooled add on top of the yogurt/spinach before adding the cheese, bake as indicated.}

This salmon is great served with rice or mashed potatoes. When the salmon is cooked and the cheese is melted it gives off a great taste that you don’t want to miss out on. This salmon recipe is a pretty “fancy” meal so it’s a great meal to serve at your next gathering. Your guests will love it!

Baked Salmon with a yogurt, spinach and cheese spread.

Servings: 4 servings

  • 2 lbs salmon
  • 5.3 oz cup Chobani plain yogurt
  • 1.5 cups spinach, lightly packed
  • ½ tsp lemon pepper seasoning
  • 2 garlic cloves, minced
  • 3 Tbsp chopped parsley
  • Salt & pepper
  • ¾ cup mozzarella cheese
  1. Preheat oven to 375°F. Line baking sheet with parchment paper (the salmon will be easier to remove if baked on parchment paper instead of foil).
  2. Lightly salt and pepper salmon on both sides. Place onto parchment paper.
  3. Chop spinach really fine. In bowl combine spinach, yogurt, garlic, parsley and seasoning.
  4. Spread the spinach mixture over the salmon. Top with cheese.
  5. Bake 18-20 minutes uncovered. Turn heat up to 400°F and broil 5 minutes or until cheese starts to turn golden color. Serve immediately. Enjoy.
