I love salads. We have them with just about even meal we have for dinner, unless it’s soup, then we don’t. Though some salads take longer to make, this kind of salad is my favorite. The ingredients are usually on hand and easy to throw together yet results are fantastic. I love the combination of red cabbage, cabbage, added with corn, cucumbers and tomatoes. Just a great balance of each and comes together so lovely. Enjoy this with an easy casserole, homemade bread and this popular dessert of course.

Over the weekend we celebrated my father-in-law’s 60th birthday. I was going through some pictures and just had to share a few. How cute is this child of ours? She’s sugar and spice and everything lovable and nice. So she is finally starting to talk, it’s taken her forever. The other day she accidentally spilled milk. I came into the kitchen and said “Abi, what are you suppose to say?” she had tears in her little eyes and goes, “Thank you.” Bahaha. How do I discipline that? I about busted out laughing and she adds, “I love you more mommy.” Ye. Disciplining her is nearly impossible. 😉 She’s got the WHOLE family wrapped around her little fingers.. <3 Now to the recipe..

Ingredients for Cabbage Corn and Tomato Salad:

1 cup red cabbage, packed

1 cup cabbage, packed

1/2 cup halved cherry tomatoes

1/2 cup cucumber slices

3/4 cup canned corn, drained

1/4 cup Mayonnaise

1 garlic clove, minced

Salt, pepper to taste

Serves: 2

How to make Cabbage Corn and Tomato Salad:

Shred cabbages really fine (a Mandoline Slicer works fantastic). Cut in three or half tomatoes. Slice cucumber into thin slices. Drain corn.

  • 1 cup red cabbage, shredded
  • 1 cup white cabbage, shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 3/4 cup canned corn, drained
  • 1/4 cup mayonnaise
  • 1 garlic clove, minced
  • salt and pepper, to taste

    I really want to try this, can I just make it with Roma tomatoes I don’t have cherry tomatoes.?

    Hi! This salad would ok to make ahead? And just add the tomatoes/cucumbers and mix with mayo befor serving? Anything time saving is a plus for me 🙂

      Yes, this is a perfect salad to make the previous day. I even do the tomatoes and cuces the night before. Just keep it covered and it works great☺. Love this salad….

      Oh it is Lana, just a wonderful salad for anytime of year. I love that it doesn’t get soggy right away so it’s perfect for parties or a make-ahead salad?.
